What to know before you pick a sparkling wine

The main categories worth knowing: Champagne (from Champagne, France — traditional method, aged on lees, the benchmark), Prosecco (from Italy — Glera grape, tank method, lighter and fruitier), Cava (Spanish — traditional method, excellent value), Franciacorta (Italian — Champagne method, underrated), and California sparkling (from producers like Schramsberg and Roederer Estate — often made in the Champagne method). Price tends to track method: traditional-method bottles aged on lees are more complex and usually cost more than tank-method Prosecco.
