Napa Valley Chardonnay is the most argued-about white wine in America, and the argument is really about one word: butter. For thirty years the region's signature style leaned hard into full malolactic fermentation and new French oak, producing wines of tremendous richness that a certain crowd loves without reservation and another crowd rejects on principle. Both crowds are represented in this collection, and knowing which one you belong to makes choosing very easy.

The two styles, and how to tell them apart

Rich and buttery. Malolactic fermentation converts sharp malic acid — the acid in a green apple — into softer lactic acid, the acid in cream. A by-product of that conversion is diacetyl, the compound that literally smells like butter. Add ageing in new French oak and lees stirring, and you get the classic Napa profile: creamy texture, baked apple, vanilla, toasted hazelnut.

Rombauer Vineyards Chardonnay Carneros ($49.99) is the definitive example and probably the single most recognisable Chardonnay in the country. If someone tells you they love big Napa Chardonnay, this is almost certainly the wine that convinced them. Cakebread Cellars Chardonnay ($55.09) is the more restrained take on the same idea, and Cakebread Cellars Chardonnay Reserve ($79.99) is the step up for a special occasion. Beringer Chardonnay Private Reserve ($42.09) brings serious oak and serious age-worthiness.

Lean and mineral. Skip or partially block malolactic fermentation, use older or neutral barrels, and Napa fruit produces something entirely different: citrus, white flowers, wet stone, and a long dry finish. This has quietly become the direction most serious Napa producers are moving in.

Grgich Hills Chardonnay ($52.99) is the historically important bottle here — Miljenko Grgich made the Chardonnay that beat Burgundy at the 1976 Judgment of Paris, and his own estate has stayed committed to a restrained, structured style ever since. Trefethen Chardonnay ($34.99) from the cool Oak Knoll district is bright and precise. Groth Chardonnay ($34.99) and Sequoia Grove Chardonnay ($28.09) both sit in the balanced middle, and are the safest bottles to bring to a table where you do not know the preferences.

What to spend

Serving: the mistake almost everyone makes

Napa Chardonnay is served too cold, almost universally. Straight from a fridge at 38°F, all you taste is oak and alcohol — the fruit and the texture are numbed out entirely. Aim for 50–55°F, which means taking the bottle out of the fridge twenty minutes before you pour, or chilling it for only forty minutes from room temperature.

Use a proper white wine glass with a reasonably wide bowl rather than a narrow flute-shaped one. And do not be afraid to decant the richer bottles — a Rombauer or an Alpha Omega opens up considerably after fifteen minutes of air.

What to eat with it

Rich, oaked Chardonnay is a fat-friendly wine: roast chicken with the skin on, lobster with drawn butter, crab, corn, anything with a cream sauce, aged gruyère. The wine's own texture matches the dish's texture, which is the more reliable pairing principle than matching flavours.
