Is this Riesling sweet or dry?
Off-dry, and much closer to the dry end than most people expect. There is some residual sugar, but the Saar's very high natural acidity balances it so completely that the wine reads as fresh and mineral rather than sweet. This is the classic misunderstanding about German Riesling: ripeness at harvest and sweetness in the glass are two different things, and a wine can be picked very ripe and still finish dry. Where is the Saar, and why does it matter?
The Saar is a tributary of the Mosel and the coolest, most marginal corner of Germany's most famous Riesling region. Schlangengraben is a slate-soil site near Wiltingen. Cool-climate slate does two things: it retains heat and radiates it back to the vines through cold nights, and it produces the flinty, stony character that Saar Riesling is known for. The result is a wine with more tension and less fruit sweetness than Rieslings from warmer German regions.

Lime and green apple, wet slate and citrus peel, white flowers, and a long, saline finish. How should I serve and store it?
Serve at 46–50°F, which means pulling it from the fridge about fifteen minutes before pouring. Served ice-cold straight from the back of the fridge, the aromatics simply switch off — this is the most common mistake with German Riesling. Use a normal white wine glass rather than a narrow flute. Unopened, good Saar Riesling ages remarkably well and will develop for ten years or more; once opened, re-cork and refrigerate and drink within four days.
