New Riff distils its own whiskey in Newport, Kentucky, directly across the Ohio River from Cincinnati, on the site of a former liquor store. The distillery was founded in 2014 and is unusually transparent about its process: sour mash, no chill filtration, and a mash bill of 65% corn, 30% rye and 5% malted barley. Expect baking spice and black pepper from the rye up front, then a darker core of caramel, toffee and dark cherry, and a long finish with real tannic grip from the non-chill-filtered texture. At 100 proof it has weight without heat. Because it is a single barrel, treat this as a description of the house style rather than a promise about your specific bottle.

Neat first, always — you paid for one specific barrel and you should find out what it is. A few drops of water will open up the fruit and tame the rye spice if it reads hot. It also makes an excellent old fashioned, where the high rye and the 100 proof both survive dilution better than a softer 90-proof bourbon would.
