Sparkling wine is the only category people buy almost entirely for the occasion rather than the taste — which is why so much of it disappoints. The fix is not spending more. It is knowing which of the three production methods you are buying, because that decides what the wine tastes like far more than the price on the shelf does.

The three methods, and what each one costs you

Tank method (Charmat). The second fermentation happens in a pressurised steel tank, then the wine is bottled. Fast, clean, and it preserves primary fruit — which is exactly what you want from Prosecco. Expect pear, green apple, white flowers, a softer bead. This is where the value is.

Traditional method. The second fermentation happens inside the bottle you buy, and the wine then rests on its spent yeast for months or years. That contact is what produces the bread, brioche and toasted-nut character people mean when they say a sparkling wine tastes "serious," along with a finer, more persistent bead. Champagne, Cava, Franciacorta and most quality domestic sparkling use it. It costs more because it takes longer and requires more handling.

Neither of the top two is better in the abstract. A tank-method Prosecco is the right wine for a spritz, a brunch and a crowd. A traditional-method bottle is the right wine when people are going to stop and taste it.

Where to start

Mionetto Il Prosecco 375ml ($7.99) is the half-bottle worth keeping several of — enough for two glasses, no waste, and the single cheapest way to have something cold and correct in the fridge at all times. Maschio Prosecco Brut ($10.99) is the full-size everyday bottle: crisp, pear-driven, and priced so you can open it on a Wednesday without thinking about it.

Acinum Prosecco ($13.99) steps up in concentration and is the better choice when the wine is being drunk on its own rather than mixed. Santa Margherita Prosecco 375ml ($13.99) is the recognisable name in half-bottle format — useful for gifting and for tables where one person is drinking sparkling and nobody else is.

Rischio Reale Prosecco ($15.99) is the deepest-stocked bottle in this collection, which makes it the safe pick when you need six or twelve of the same thing for an event and cannot risk a partial fill.

Beyond Prosecco

Korbel Brut ($16.99) is the Californian counterpoint — drier and more bready than any Prosecco here, and a better match for salty food and fried things. If your sparkling is doing table duty rather than aperitif duty, start here.

Buying for a crowd

A 750ml bottle pours six sparkling glasses, not four — the pour is smaller. For a toast, budget one bottle per six people; for an evening where sparkling is the only wine, one per two. Serve at 43–47°F, which is colder than you serve white wine, and open the bottle by turning the bottle and holding the cork still.
