Process & Profile
Zumbador is produced by the López family, who have been growing agave in Jalisco for four generations. The estate, El Sabino, maintains approximately 1,000 acres with 1.5 million agave plants, while fourth-generation agave grower and Maestro Tequilero Roberto López Anaya oversees the production process.
For the Reposado, Tequilana Weber Azul agaves averaging six years of age are cooked in traditional masonry ovens before being crushed using a tahona. Fermentation takes place in both wood and stainless-steel vessels, followed by distillation using copper and stainless-steel stills. These traditional and artisanal methods are designed to keep cooked agave at the center of the finished tequila.
The tequila is then rested for 12 weeks in ex-whiskey barrels. Rather than allowing oak to dominate the spirit, this relatively brief maturation adds softness, color, and subtle barrel complexity while maintaining the brightness of the underlying agave.
On the nose, Zumbador’s official tasting notes highlight rich fruit, butterscotch, and agave. Additional tasting impressions show layers of cooked agave, vanilla, caramel, citrus, toasted oak, earth, and black pepper, creating a profile that is both fresh and gently rounded by its time in wood.
