Process & Profile
Cnoc Na Mòine — Gaelic for "the heath hill" — is drawn from Torabhaig, only the second legal distillery ever built on Skye, which fired its stills in 2017 inside a restored 19th-century farmstead at Teangue on the Sleat peninsula. This chapter is matured in ex-bourbon American oak alongside Oloroso and Pedro Ximénez sherry casks, then bottled at 46% ABV without chill-filtration or added colour. The Legacy Series is the distillery's way of documenting its earliest years of production, each chapter a snapshot of the young spirit finding its voice.
On the nose, gentle peat smoke frames citrus zest and vibrant orchard fruit, with a faint echo of smouldering ash, vanilla sweetness, and freshly cut oak.
Across the palate the smoke turns to grilled barbecue char, met by spicy black pepper, a balsamic tang, and the darker sweetness of cedar and leather drawn from the sherry casks.
The finish lets the Oloroso and PX influence rise, holding it in balance against the distillery's signature peat and spice.
What marks this chapter out within the Legacy Series is the sherry weight: where earlier releases leaned on bourbon-cask brightness, the Oloroso and PX casks here push Cnoc Na Mòine toward dried-fruit richness while keeping the coastal smoke that defines Torabhaig's house character.
