Proof & Wood marks its first-ever Bottled in Bond release with this 11-year-old Tumblin' Dice, distilled in a single season in 2014 at MGP in Indiana from a rare 99% corn, 1% barley mash bill and bottled at a full 100 proof. Expect sweet corn, caramel and vanilla on the nose, followed by toasted oak, brown sugar, baking spice and roasted nuts, then a long, warming finish of caramel and dry oak. With only about 400 cases produced, it's a distinctive, well-aged departure from the line's high-rye bourbon and a compelling bottle for anyone who loves mature, oak-forward whiskey.

Tumblin' Dice 11 Year Bottled in Bond comes from Proof & Wood, an independent whiskey company that selects exceptional stocks and bottles them under its own labels. Distilled in fall 2014 at MGP in Lawrenceburg, Indiana, this straight bourbon was made from a strikingly unusual mash bill of 99% corn and 1% barley, then aged at least 11 years in new charred oak barrels. True to the Bottled-in-Bond Act of 1897, it comes from a single distillation season and is bottled at 100 proof (50% ABV).

Sweet corn leads, joined by rich caramel and warm vanilla.

Toasted oak and brown sugar take center stage, layered with baking spice, roasted nuts and a touch of barrel char. More than a decade in the barrel brings mature oak character, balanced by a soft, rounded sweetness.

Long and warming, with lingering caramel, gentle spice and a dry, oak-forward close.

This is Proof & Wood's first-ever Bottled in Bond release. It is a limited run of roughly 400 cases. Its near-all-corn recipe sets it apart from the high-rye bourbon already in the Tumblin' Dice lineup, offering a rare look at how a high-corn bourbon develops over 11-plus years in oak.

Sip it neat to appreciate the interplay of corn sweetness and mature oak. Add a few drops of water or a single large ice cube to open up the caramel and baking spice notes. For a special occasion, it makes a memorable base for a spirit-forward Old Fashioned.
