Process & Profile
The agave is grown in the Lowlands of Jalisco and distilled in partnership with the Rosales family at their Cascahuín distillery in El Arenal, a house known for traditional, additive-free production. Released in numbered batches at 45.5% ABV (91 proof), the joven skips heavy barrel aging in favor of a French oak wine-cask finish that drapes soft fruit over bright agave.
On the nose, fresh cooked agave leads, with citrus zest, honey, and a stony minerality sitting behind it.
On the palate, agave sweetness meets vanilla, cracked pepper, and a wine-cask note of red fruit, with fresh herbs and a cool mint lift.
The finish is medium and clean, closing on pepper-dusted agave and a trace of oak.
What makes it distinctive is the wine-cask finish paired with a higher-than-standard 91-proof bottling: most jovens chase easy, unaged brightness, while this one adds fruit-driven depth and concentration without tipping into the caramel weight of a reposado or añejo.
