Mock belongs to Kellerei Bozen’s premium Election collection, which focuses on carefully selected vineyard sites where grape variety, soil, and microclimate come together particularly well. The Sauvignon Blanc for Mock comes from steep, gravelly vineyards around Bolzano at roughly 500 meters above sea level, where warm days and cool nights encourage aromatic ripeness while maintaining lively acidity.
The wine has a particularly strong connection to the historic Mockhof vineyard in the Isarco Valley. The Platter family began planting Sauvignon Blanc there in the 1970s, when the variety was still unusual for the site. The vineyard’s elevation, cool nighttime air, and steep terraces proved exceptionally well suited to Sauvignon Blanc, and today white varieties—especially Sauvignon—dominate the property.
Harvest takes place in September. After a short cold maceration, the ripe grapes are gently pressed, followed by fermentation and maturation entirely in stainless-steel tanks. This approach preserves the grape’s freshness, herbal character, citrus fruit, and mineral precision without introducing oak influence.
In the glass, Mock displays a pale straw-yellow color with greenish reflections. The nose is expressive and varietally distinctive, showing nettle, peach, grapefruit, acacia blossom, and elderflower, with additional green herbal notes. With bottle age, the wine can develop more pronounced flint and mineral nuances.
The palate is fresh, aromatic, and full-flavored, with crisp acidity providing structure to the ripe peach and grapefruit fruit. Herbal and floral tones continue through the mid-palate, while the gravelly hillside soils contribute a clean, mineral-driven character.
The finish is persistent and refreshing, leaving lingering grapefruit, peach, elderflower, herbs, and flinty mineral notes. With approximately 2.1 g/L residual sugar, the wine remains firmly dry and focused, while its 13.5% ABV gives it enough weight to accompany substantial dishes.
