Colonel E.H. Taylor Small Batch is Bottled in Bond at exactly 100 proof — distilled in a single season, aged a minimum of four years, and bottled under federal supervision. The barrels are pulled from Warehouse C, the century-old rickhouse Colonel Taylor built himself in 1881. The nose opens on chocolate, molasses and brown sugar, with sweet cherry and light cinnamon underneath. The palate is dense and candied — stone fruit, dark grape and pepper — before a creamy finish turns dry and leathery with white pepper and dried apricot.
Eagle Rare takes the same mash bill and sits it in oak for a minimum of ten years, then bottles it at a gentler 90 proof. Age does the work here: toffee, candied almond and orange peel on the nose, a palate of vanilla, dark cherry and toasted oak, and a long dry finish with leather and cocoa. Where the Taylor is bold and sweet, the Eagle Rare is restrained and woody.
