Process & Profile
Chinaco is distilled at Tequilera La Gonzaleña, the first and still essentially the only tequila distillery in the state of Tamaulipas, founded in 1977 by Guillermo González Díaz Lombardo. That single fact shapes everything in the glass: the estate-grown Blue Weber agave ripens in Tamaulipas soil rather than the Jalisco lowlands or highlands, giving Chinaco a flavor signature the big houses simply cannot copy. This añejo rests up to 30 months in a mix of French and English white-oak ex-Scotch casks and American ex-bourbon barrels, and it carries no additives — what you taste is agave and wood, nothing engineered.
On the nose, cooked agave leads into pear, dried wildflowers, vanilla bean, and a faint curl of woodsmoke, with baked apple and tropical papaya underneath.
On the palate, it turns oily and buttery — cinnamon, clove, toasted biscuit, and a savory brush of black olive brine, all wrapped around a creamy vanilla core.
The finish is long and gently spiced, closing on lemon zest, toasted nut, and a whisper of oak that never tips into bitterness.
Where most añejos chase caramel sweetness, Chinaco leans savory and nutty — a direct result of its Scotch-cask maturation and Tamaulipas agave. It sits closer to a fine aged rum or lightly peated malt than to a typical Jalisco añejo, which is exactly why it built a cult following among tequila purists in the 1980s and never lost it.
