Every component in the blend is distilled during the same six-month season, and each Tennessee High Malt recipe contains at least 25% specialty malted grains, giving the whiskey additional flavor and aromatic complexity beyond a more conventional bourbon recipe.
The Spring 2022 Vintage is composed of 80% SB091 and 20% SB112. SB091 combines yellow corn, malted rye, caramel malted barley, and honey malted barley, contributing caramel, honey, and citrus notes. SB112 incorporates yellow corn, malted rye, Carabohemian malted barley, Caraaroma malted barley, and extra-dark caramel malted barley, bringing richer tones of salted caramel and apple butter.
Following an attenuated seven-day fermentation, the bourbon is matured for more than four years in 53-gallon toasted and charred oak barrels.
