Château Sainte Marguerite Fantastique Rosé Cru Classé Côtes de Provence 750mL comes from one of only 18 estates in Provence holding Cru Classé status, farmed organically and vinified without animal inputs. It is the bottle to reach for when a Provençal rosé has to hold its own at the dinner table rather than sit in an ice bucket.

Process & Profile

The estate sits at La Londe-les-Maures, on filtering siliceous-clay hillsides shot through with pebbles and broken quartz, five minutes from the Mediterranean. Château Sainte Marguerite has held Cru Classé rank since the 1955 classification, and the Fayard family — owners since 1977 — converted the whole property to certified organic farming (FR-BIO-01, Ecocert) in 2003, with the wines registered vegan. Fantastique, created in 2017, blends Grenache, Cinsault and Rolle from the estate's historic parcels: cold skin maceration before pressing, temperature-controlled fermentation, then aging in vat on fine lees. The current release runs 13% ABV.

The wine is a pale pearly pink with golden highlights in the glass.

On the nose, white peach and pear give way to lychee, passion fruit and grapefruit zest.

The palate is citrus-driven and floral — rose petal with a trace of jasmine — carried on aromatic freshness rather than weight, with a finish that stretches out well past the swallow.

Within the estate's range, Fantastique sits above the Marguerites en Provence line and below Symphonie, and it is the cuvée that best shows the La Londe terroir without the oak or gastronomy framing of the top bottling. Raimonds Tomsons, World's Best Sommelier 2023, singled it out. The vertical, structured build is what separates it from the softer, fruit-forward rosés that dominate the category.

Serve at 8-10°C in a white wine glass, not a flute or a tumbler. It is built for food — tuna tataki with ginger and sesame is the estate's own pairing.
