To carry it, the whiskey must be the product of one distillation season at one distillery, aged at least four years in a federally supervised warehouse, bottled at exactly 100 proof, and the distillery must be identified on the label. It is a strong ratio, yes. Age statements have been quietly disappearing from American whiskey for a decade as demand outran supply, so a seven-year statement at this price is worth noticing. Age is not the same as quality — a mediocre distillate does not improve by sitting longer, and over-aged bourbon goes woody — but it does mean you are not paying for a young whiskey dressed up with a story. At 100 proof with seven years behind it, expect a fuller body than an 80-proof bourbon, with caramel and baking spice up front, oak arriving in the middle, and a dry finish rather than a sweet one. Drink it neat first to get its measure, then add a few drops of water — at 100 proof, water genuinely opens it rather than diluting it away. It is also stiff enough to hold its shape in an Old Fashioned, which many softer bourbons are not.

It sits in the middle of the bonded field on both age and price. Evan Williams Bottled-in-Bond ($38.09) is the value benchmark at four years, and Heaven Hill 7 Year Bottled In Bond Kentucky Straight Bourbon Whiskey ($58.09) is the closest direct comparison at the same age from a distillery that has been running continuously since 1935. Tasting two seven-year bonded bourbons side by side is one of the more instructive things you can do with $115, because proof and age are held constant and only the distillate differs.
