Bardstown Bourbon Company 2026 Discovery is a limited-edition blend of mature American straight bourbons finished in exceptionally rare Garryana oak barrels from Oregon. Built from 7-, 10-, and 11-year-old bourbons from Kentucky and Indiana, the finished blend rests for an additional four months in custom Garryana oak, then is bottled at a robust 112.8 proof (56.4% ABV). Toasted oak, burnt sugar, baked apple cobbler, dried cherry, cinnamon bark, and warming spice define a complex release that pushes Bardstown’s celebrated Discovery blending program into a distinctly new direction.

Process & Profile

For the 2026 Discovery, Bardstown Bourbon Company selected three mature straight bourbons specifically for their balance of developed fruit and mature oak. The final blend consists of 55% 10-year-old Indiana bourbon, 25% 11-year-old Kentucky bourbon, and 20% 7-year-old Kentucky bourbon.

The 10-year Indiana bourbon, representing 55% of the blend, uses a mash bill of 75% corn, 21% rye, and 4% malted barley. The 11-year Kentucky component makes up 25% and uses 74% corn, 18% rye, and 8% malted barley, while the remaining 20% is a 7-year Kentucky bourbon built around a corn-forward recipe with 16% rye and 10% malted barley. Together, these components provide mature caramelized sweetness, fruit, rye spice, and substantial oak structure.

Once blended, the bourbon was transferred into barrels made from Quercus garryana, commonly known as Oregon White Oak. Native to the Pacific Northwest, Garryana is much scarcer than the American white oak traditionally used for bourbon and is known for its dense grain and distinctive spice-driven influence, particularly clove and nutmeg.

The Garryana barrels were custom-made by Oregon Barrel Works and hand-toasted for three hours to unlock additional layers of spice and complexity. Bardstown intentionally carried out the approximately four-month finishing period during summer, when higher warehouse temperatures encouraged greater interaction between the whiskey and the rare oak. The finished whiskey was then gradually proofed before bottling.

On the nose, toasted oak and burnt sugar immediately establish a rich, mature foundation, followed by baked apple cobbler, dried cherry, caramelized fruit, cinnamon, and warm baking spice. Garryana oak introduces additional savory spice and seasoned-wood complexity without overwhelming the older bourbon underneath.

The palate is full-bodied and concentrated, combining baked apple, dried cherry, burnt brown sugar, cinnamon bark, toasted oak, and warm spice. Independent tasting impressions also reveal fig, raisin, blackberry, peach, toasted marshmallow, and herbal nuances, giving the whiskey an intriguing balance between rich fruit and the distinctive structure of Garryana oak.

The finish is long, warming, and oak-driven, with lingering cinnamon, charred sugar, dried fruit, baking spice, and firm tannic structure. At 112.8 proof, the whiskey carries substantial intensity while maintaining the balance between its mature bourbon components and its distinctive finishing wood.

What makes Bardstown Bourbon Company 2026 Discovery especially compelling is the combination of three mature bourbons aged 7 to 11 years, Kentucky and Indiana whiskey, four months of rare Garryana oak finishing, custom three-hour barrel toasting, and a powerful 112.8-proof presentation. It is also only the second Bardstown Bourbon Company release to explore Garryana oak, following the highly limited Cascadia Garryana Finish released earlier in 2026.

The 2026 release also marks a new chapter for Discovery visually. Louisville artist Margaret Archambault tasted the whiskey and translated its aroma, flavor, and texture into original artwork that appears on the bottle label. Bardstown released the whiskey nationwide beginning August 21, 2026, in limited quantities.
