Bottled at 86 proof (43% ABV) from 100% Blue Weber (Tequilana Weber) agave, this expression is built on the Rosales family's craft at Cascahuín, a distillery the family has run for four generations dating back to 1904 — the name translates from Náhuatl as "mountain of light." Agave piñas are roasted in traditional stone and brick ovens, a slow method that preserves the earthy, herbaceous depth of lowland fruit, with master distiller Don Salvador Rosales Torres overseeing the make.
On the nose, orange blossom (azahar), wet clay, roasted pineapple, plum, and a thread of woodsmoke sit over cinnamon and warm butter.
On the palate, it turns oily and full: cracked black pepper, toasted almond, anise, baking spice, and a mineral, terroir-driven agave core.
The finish is long and peppery, drying toward earth and smoke rather than sugar.
