Produced at El Sabino in Jesús María, Los Altos de Jalisco, it is made from single-estate Tequilana Weber agave and bottled at a powerful 108 proof (54% ABV). Process & Profile

Zumbador is produced by the López family, fourth-generation agave growers whose El Sabino estate encompasses approximately 1,000 acres with 1.5 million agave plants in the Jalisco Highlands. Maestro Tequilero Roberto López Anaya oversees production with an emphasis on traditional cultivation and distillation methods.

The High Proof Blanco uses mature, single-estate Highland agave that is cooked in traditional masonry ovens before extraction through a combination of tahona and roller mill. Fermentation takes place in wood and stainless-steel tanks, both with and without agave fibers, using open-air fermentation. The tequila is then double distilled through copper and stainless-steel pot stills using deep-well water.

Because it is bottled unaged at 54% ABV, the High Proof Blanco offers a more concentrated expression of Zumbador’s agave-driven style. The higher proof adds weight and intensity without hiding the underlying character of the spirit, resulting in a blanco that is powerful but remarkably composed.

On the nose, expect sweet cooked agave, tropical fruit, citrus, cinnamon, black and white pepper, fresh herbs, wet stone, and earthy minerality. The aromatics are noticeably concentrated, with the higher alcohol carrying more of the agave, citrus, and mineral notes from the glass.
