Zumbador comes from the López family, fourth-generation agave growers in Jalisco. The family’s El Sabino estate encompasses approximately 1,000 acres with 1.5 million agave plants, while Maestro Tequilero Roberto López Anaya oversees production with an emphasis on traditional cultivation and distillation methods.
For the Añejo, Zumbador uses approximately six-year-old Blue Weber agave grown in the Jalisco Highlands. The agaves are cooked in masonry ovens and crushed using a tahona, followed by fermentation in a combination of wood and stainless-steel vessels and distillation using copper and stainless-steel equipment.
The tequila is then rested for 12 months in previously used American oak ex-whiskey barrels. Zumbador specifically describes its aging philosophy as building complexity while preventing oak from becoming the dominant flavor, preserving the roasted agave character beneath the barrel influence.
