About the Distillery
Located in Florence, Missouri, a small town fifty miles from the Ozarks, Wood Hat Distillery is owned by distiller Gary Hinegardner. With an impressive resume that includes 20+ years as an agronomist and another 15+ years as a cooper, Gary has a unique view of bourbon and whiskey production. He is well suited to showcase the best of what Missouri whiskey has to offer.
Gary's products are made from locally grown Missouri grains and use open-pollinated heritage corn selected for taste rather than yield. Wood Hat whiskies are an actual Field to Glass experience; all of their spirits are fermented, distilled, and aged onsite using an exceedingly rare wood-fired still, which is fed with leftover wood from a neighboring cooperage. Committed to keeping production as green and local as possible, the distillery is carbon-neutral and produces little waste; ash from the wood is still used to fertilize the corn fields, and leftover spent mash is fed to livestock.
Wood Hat Distillery is certified as a true Craft Distillery by the American Distilling Institute and has won numerous awards, proving that its products are bold, unique, and cutting-edge in the whiskey world.
