Process & Profile
Distilled at the Ross & Squibb Distillery in Lawrenceburg, Indiana — the historic Seagram's plant renamed in 2021 for two of its 19th-century predecessors — this straight wheat whiskey was laid down in 2017 and bottled at a muscular 113 proof (56.5% ABV). After primary maturation it was married across four fortified-wine casks: Tawny Port, White Port, Oloroso Sherry, and Ruby Port, a four-way finish that gives the wheat spirit its dried-fruit weight. The Remus name itself nods to George Remus, the Cincinnati attorney turned Prohibition-era "King of the Bootleggers" whose story helped inspire Fitzgerald's Gatsby.
On the nose, dark chocolate and almond praline lead, followed by port-soaked raisin, dried fig, and a curl of toasted oak.
On the palate, milk-chocolate richness meets malty biscuit, black cherry, and warm baking spice, with a faint earthiness underneath that keeps the sweetness in check.
The finish is long and warming, chocolate and malt slowly giving way to a dry walnut note.
What sets the release apart is its place in the Experimental Series: where No. 1 explored the distillery's bourbon, No. 2 is a deliberate departure — a soft wheat mash instead of Remus's signature high-rye, and a multi-cask fortified finish the brand had never attempted before. It reads less like the flagship bourbon and more like a distiller's sketchbook bottled at cask-leaning strength.
