Whiskey is not one drink. It is a family of them, connected by a single idea — grain, fermented, distilled, and left in wood until the wood gives something back — and separated by everything else. The grain, the country, the still, the barrel and the law all pull in different directions, and the result is a category that runs from a $22 mixing bourbon to a $180 aged single malt without ever feeling like the same product twice. How the categories actually differ

Bourbon must be American, at least 51% corn, and aged in new charred oak. That new-oak rule is the whole story — it is why bourbon tastes of vanilla, caramel and char in a way no other whiskey does. Four Roses Bourbon Small Batch ($37.99) is the archetype: four different recipes blended into something sweet, bright and immediately likeable.

Rye flips the mash bill to at least 51% rye grain, which trades bourbon's sweetness for pepper, mint and a dry finish. WhistlePig 10 Year Rye American Whiskey ($79.99) is the reference bottle for what a well-aged American rye can be.

Scotch is made in Scotland from malted barley, usually aged in used barrels rather than new ones, which is why it leans on fruit, sherry and smoke instead of vanilla. Macallan Sherry Oak Scotch Single Malt 12 Year ($99.99) is the sherry-cask benchmark and one of the most recognizable bottles in the world.

Irish whiskey is typically triple distilled, which makes it lighter and softer. Redbreast 12 Year Irish Whiskey ($79.99) is single pot still — a uniquely Irish style using both malted and unmalted barley — and widely regarded as the best value in premium whiskey anywhere.

Japanese whisky took the Scottish method and refined it toward balance and precision. The Yamazaki Whisky Single Malt 12 Year ($179.99) is the bottle that started the category's global reputation.

Where to start, by what you already like

If you drink rum or like sweet things, start with bourbon. If you drink gin or dry wine, start with rye or a Highland Scotch. If you have tried whiskey once and found it harsh, the problem was almost certainly proof and temperature rather than the whiskey — try Evan Williams Black ($24.09) over a large ice cube and give it two minutes before the first sip.

For something with a real age statement that does not cost a fortune, Knob Creek 12 Year Bourbon Whiskey ($79.99) is twelve years old at 100 proof. For a Kentucky classic at a fair price, Buffalo Trace Kentucky Straight Bourbon Whiskey ($78.99) is the bottle most whiskey drinkers cut their teeth on.
