A finish is a second maturation: the distiller moves aged whiskey into a barrel that previously held something else, and lets it borrow. Weeks or years later, the result carries the base bourbon's backbone with a layer of the cask on top — dried fruit and nuttiness from sherry, molasses and tropical sweetness from rum, dark berry and tannin from wine.
