New Louisville Whiskey Company is the premium single-barrel program from PCS Distilling Company, the Louisville producer behind NULU and Hazelbaker whiskeys. The program focuses on older barrels earmarked for extended maturation, with selected bourbons bottled individually when they reach what the producer considers peak maturity.
Barrel A132 was originally distilled at MGP in Lawrenceburg, Indiana from a mash bill of 75% corn, 21% rye, and 4% malted barley. The substantial rye component adds pepper, baking spice, and structure to the rich corn sweetness, while malted barley contributes toasted grain and additional depth.
The bourbon matured for 10 years in a new charred American oak barrel. Part of that aging took place at PCS Distilling’s Louisville warehouse, where the barrel underwent heat cycling. By deliberately introducing temperature fluctuations, the process increases interaction between whiskey and oak and can concentrate both flavor and alcohol as maturation progresses.
The result is a genuine hazmat-strength bourbon bottled at 70.2% ABV / 140.4 proof. No dilution is used to bring the whiskey to a standardized bottling proof, and the bourbon is non-chill filtered, preserving the barrel’s full body, natural oils, and concentrated texture.
