The "45" in Dassai 45 refers to the seimaibuai, or rice-polishing ratio. The number means that 55% of each grain of rice has been milled away, leaving only the innermost 45% of the grain for brewing. That centrally-located starch is the cleanest, purest part of the rice grain — polishing this aggressively is what qualifies Dassai 45 as a "Junmai Daiginjo," the highest legal grade of sake.
