Everyday Sparklers ($10–$20)

The bubbles you don't think twice about opening on a weeknight. Segura Viudas Cava Brut Reserva ($9.99) is the value cava we recommend most often — a serious Catalan sparkler at a Tuesday-night price. Cristalino Cava Brut ($10.99) is a similar play. La Marca Prosecco ($17.99) is the Italian Prosecco that's earned its way to the top of every American Prosecco list — clean apple, peach, and white-flower notes with a soft, easy mousse. Premium Prosecco & Italian Sparklers ($20–$40)

This is where Italian sparkling gets seriously interesting. Bisol Prosecco Superiore Brut Crede ($24.99) is a Conegliano Valdobbiadene DOCG — the top tier of Prosecco classification — and a step up in concentration and length over the basic DOC. Antica Fratta Franciacorta Brut ($27.99) is one of the entry points to Franciacorta, Italy's méthode champenoise category, with secondary fermentation in bottle just like Champagne. California & New World Sparklers

The real thing — sparkling wine that, by law, can only come from the Champagne region of France. Moët & Chandon Brut Imperial ($29.99 / 375ml) is the world's best-selling Champagne and the easy starting point. Piper-Heidsieck Brut ($57.09) and Bollinger Special Cuvée Brut ($57.99) are the next tier — serious grower-style Champagne with more depth and a longer finish.
