Ocho notes that agaves from this difficult terrain tend to have below-average individual weight but maintain high sugar concentrations, producing notably sweet and concentrated flavors.
Production follows Ocho’s traditional, agave-focused methods. The tequila is made from Tequilana Weber Blue Agave, cooked in stone or brick ovens, crushed by roller mill, fermented in wooden tanks using open-air fermentation, and double distilled in copper pot stills. What separates this expression from Ocho’s younger releases is its extended maturation. The tequila spends three years in seasoned American oak barrels previously used for American whiskey. The nose opens with dried raisins and peach, dark chocolate, salted caramel, vanilla, cooked agave, toffee, and fresh oak, creating a rich aromatic profile that balances mature barrel character with Ocho’s recognizable agave foundation.
The palate is rich and rounded, showing cooked agave, roasted coffee, nuts, orange peel, black pepper, cherry, and oak. Additional layers of caramel, vanilla, cinnamon, and baking spice develop as the tequila rests in the glass, giving it considerably more depth than a conventional Reposado or Añejo while still preserving the freshness of the agave.
The finish is long, warming, and exceptionally smooth, with lingering vanilla, roasted coffee, fresh oak, cooked agave, dark chocolate, and peppery barrel spice. A rounded mouthfeel gives the tequila richness without making it excessively sweet or wood-driven.
