The grapes are harvested by hand during the final ten days of September and undergo maceration on their skins to develop aroma, color, and tannin structure. Fermentation takes place under controlled temperatures.
Following fermentation, the wine spends approximately two months in stainless steel, followed by 12–15 months in French Allier oak tonneaux and barriques. It then receives at least four additional months of bottle maturation before release.
