Process & Profile
Distilled at NOM 1477, Tequila Puerta de Hierro in El Arenal, Jalisco — the first distillery on the Tequila Route, at Km 32 of the Guadalajara–Tepic highway. The Partida family has grown agave in the region for more than six generations, and Casa Cava de Oro was built alongside their own fields in 1999 so that estate-grown Blue Weber agave could go straight from harvest to still. Master tequilero Alberto Partida runs the maturation program, which leans on French oak red-wine casks rather than the ex-bourbon American oak that dominates the category. This release spends five years across a blend of French and American oak, including barrels with red-wine history, and is bottled at 40% ABV (80 proof) in the brand's matte black bottle.
On the nose, cinnamon bark, caramelized sugar, vanilla bean, nutmeg, and dried fig.
On the palate, toasted cinnamon, maple syrup, roasted agave, walnut, and a thread of dark cocoa.
The finish is long and gently sweet, with soft French-oak tannin holding the sugar in check rather than letting it spread.
Five years is unusual even among extra añejos, and it is what separates this from the standard Añejo in the same range — the agave is still legible, but the wood has had time to build structure instead of just adding sweetness. Cava de Oro's extra añejo took a Gold Medal at Spirits of Mexico in 2012, and the black bottle has been the house's flagship presentation since.
Serve neat in a Glencairn or copita at room temperature. It stands up well after a rich meal — think grilled ribeye or mole negro.
