Mezcalum embodies the rich heritage of mezcal and time-honored Mexican traditions through our commitment to authentic, natural ingredients and artisanal production.
At Mezcalum, it all begins with a carefully curated selection of Espadin and Cuishe - a rare and wild variety that only grows in highly specific, arid regions in the central valleys of Oaxaca at an altitude that ranges from 750 to 2,000 meters. Patience and knowledge are essential to craft mezcal with this type of agave as it takes about 6-12 years to reach maturity and preparation requires a specialized procedure.
Guided by generations of ancestral wisdom, our Maestro Mezcalero, Carlos Méndez Blas selects and harvests the agave hearts when they are at their peak. Following, he roasts, ferments, and distills them using artisanal methods that his family has been practicing in their palenques in Santiago de Matatlán for close to a century.
