Itami Onigoroshi is a Junmai sake, known for being super dry and light-bodied, with citrus overtones and a crisp, exceedingly dry finish. It is brewed in Itami, Japan, the historical birthplace of sake with over 450 years of brewing tradition.
"Onigoroshi" translates to "Demon Slayer," symbolizing the bold and ultra-dry flavor profile of this sake.
Its dry and light profile makes it a versatile pairing with various dishes. It pairs exceptionally well with fresh seafood like sashimi and sushi, grilled white fish, tempura, and light salads. Additionally, it serves as a great accompaniment to richer dishes such as teriyaki, yakitori, or sukiyaki.
This sake can be enjoyed both chilled or at room temperature. Chilling highlights its clean, refreshing qualities, while room temperature enhances its mellow aroma and dry finish.
The alcohol content of Itami Onigoroshi ranges from 15% to 16%, making it a moderately strong sake.
The rice used in Itami Onigoroshi is polished to 70%, which means 30% of the outer bran of the rice grains is removed during production to refine its flavor.
While traditionally enjoyed chilled or at room temperature, it can also be served warm (around 40°C to 50°C) for those who prefer a rich, aromatic experience.
Itami Onigoroshi offers mellow citrus overtones, a crisp and dry palate, and a clean finish. Its balanced profile makes it suitable for both beginners and sake connoisseurs.
Itami Onigoroshi is made through the traditional Junmai brewing process, which involves fermenting carefully polished rice, koji mold, water, and yeast. This process ensures a pure and high-quality sake without added alcohol or sugar.
Itami Onigoroshi is available in multiple sizes, including 180 mL, 300 mL, 720 mL, and 1.8 L, catering to both individual enjoyment and larger gatherings.
